  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt

RUM GLAZE:

  • 1 1/2 cups powdered sugar
  • 3 tablespoon rum
  • 1/2 teaspoon vanilla extract
  • 1/4 cup eggnog

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Grease and flour a 9×5-inch loaf pan, ensuring all surfaces are covered to prevent sticking.
  3. In a small mixing bowl, sift together the all-purpose flour, baking powder, salt, and cinnamon (or nutmeg). Set these dry ingredients aside.
  4. In a separate, medium mixing bowl, whisk together the granulated sugar, eggnog, unsweetened applesauce, rum, vegetable oil, vanilla extract, and rum extract until all ingredients are thoroughly combined and smooth.
