Ingredients

Makes 8 servings

FOR THE CRUST:

  • 2 sleeves of Graham Crackers – pulsed into crumbs
  • 2 Tablespoons of Sugar
  • 1 Stick of Butter – melted

FOR THE CHEESECAKE:

  • 4 Packages of Cream Cheese – 8 ounces each – softened
  • 1 1/2 cups of Heavy Cream – Whipped
  • 1 Tablespoon of Powdered Sugar
  • 1 teaspoon of Vanilla
  • 1/2 cup of Sugar
  • 1/2 cup of Powdered Sugar
  • 1/4 cup of Bailey’s Strawberry Cream
  • Pink Food Coloring Gel
  • 1 package of fresh Strawberries – rinsed and dried
  • Pink decorating Sugars

FROSTING:

  • 4 ounces of Cream Cheese
  • 4 Tablespoons of Butter
  • 1/4 teaspoon of Vanilla
  • 1 Tablespoon of Heavy Cream
  • 3 to 4 cups of Powdered Sugar

TO TOP:

  • Rinsed Strawberries
  • Pink Sugars

Instructions

  • Place the Graham Crackers in a food processor with the sugar, and pulse until fine crumbs form.
  • Melt the butter in a medium bowl. Add the graham cracker crumbs to the melted butter and stir thoroughly until well coated.
  • Line the bottom of a 7-inch springform pan with parchment paper. Press the crumb mixture evenly into the bottom of the pan, smoothing it with the back of a spoon.
  • Place the pan in the freezer to chill while preparing the filling.
  • In the mixing bowl of a stand mixer, combine the heavy cream and 1 tablespoon of powdered sugar. Whip with the whisk attachment until stiff peaks form. Transfer the whipped cream to a separate bowl and refrigerate.
  • In the same mixing bowl (no need to clean), add the softened cream cheese and blend until smooth and fluffy.
  • Add the vanilla, powdered sugar, and granulated sugar to the cream cheese mixture and mix until completely smooth.
  • Remove the whipped cream from the refrigerator and gently fold it into the cream cheese mixture until just combined. Take about 1/3 of this cheesecake batter and place it in a separate bowl, then refrigerate. To the remaining batter in the mixing bowl, add the Baileys Strawberry Cream and a few drops of pink food coloring gel. Mix until uniformly blended and the color is consistent.
  • Retrieve the springform pan from the freezer. Spoon about 2/3 of the pink (Baileys-infused) cheesecake mixture over the graham cracker crust.
  • Gently smooth the top surface of the pink layer and return the pan to the freezer.
  • Allow the pan to remain in the freezer for at least 4 hours, or until the pink cheesecake layer is firm.
  • Keep the reserved portion of white cheesecake batter in the refrigerator.
  • Once the pink layer in the freezer is firm, remove the pan.
  • Slice approximately 8 to 10 fresh strawberries into thin pieces. Lay them on a paper towel to absorb any excess juice.
  • Arrange the sliced strawberries over the firm pink layer. Carefully spoon the reserved white cheesecake batter on top of the sliced berries, creating the second layer of the cheesecake.
  • Smooth the white cheesecake layer and return the pan to the freezer.
  • After about 3 hours in the freezer, check if the white layer is firm. If it is, spread the remaining pink cheesecake batter on top of the white layer, forming the third and final layer of the cheesecake.
  • Place the pan back in the freezer and allow it to set overnight for the best results and firmest texture.

Decorate the Cheesecake about 30 minutes before serving, and keep it in the freezer until ready to serve.

    FOR THE FROSTING:

    • In a mixing bowl, combine the softened butter and softened cream cheese. Whip with the whisk attachment until the mixture is creamy and fluffy. Add the vanilla extract and heavy cream, then mix well. Gradually add the powdered sugar, one cup at a time, blending on low speed and scraping down the sides of the bowl as needed, until all the sugar is incorporated and the frosting is completely smooth.
    • Tear off a piece of plastic wrap about 10 inches wide. Spoon the frosting lengthwise down the center of the plastic wrap, forming a long ribbon.
    • Roll the plastic wrap tightly around the frosting, maintaining its long, ribbon-like shape. Snip off one end of the plastic wrap and twist the other end securely closed. Carefully place this frosting-filled plastic wrap into a pastry bag fitted with a large star tip.
    • Pipe the frosting onto the edges of the cheesecake using a swirling motion, creating large dollops that come to a point.
