Ingredients (Makes about 15 ping pong size Bites!)
- 7 oz sweetened coconut
- 14 oz can dulce de leche
- 7 oz can sweetened condensed milk
- 2 cups crushed Nilla wafers
- 12 oz bag of Ghirardelli dark chocolate wafers
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Spread your sweetened coconut evenly on the baking sheet.
- Cook for 15 minutes, tossing every 5 minutes to ensure the coconut toasts evenly and doesn’t burn.
- In a large glass mixing bowl, heat your dulce de leche in the microwave for 1 minute to soften.
- Scoop your toasted coconut into the bowl with the dulce de leche and mix well until combined.
- Add your crushed Nilla wafers to the mixture and mix thoroughly.
- Pour the sweetened condensed milk on top and mix all ingredients well until a cohesive mixture forms.
- Using a tablespoon, scoop out small ping pong sized balls of the mixture and place them onto a fresh piece of parchment paper.
- Freeze these coconut balls for at least one hour to firm up.
- Melt your dark chocolate wafers in a microwave-safe bowl. Heat on 50% power for 2-3 minutes, stirring every 30 seconds until completely melted and smooth.
- Remove your coconut balls from the freezer. Gently press the bottom of each ball slightly to create a flat base.
