  • Salt and pepper to taste
  • 1 cup mayonnaise
  • 1 tsp McCormick barbecue seasoning OR 1/4 cup Sweet Baby Ray’s barbecue sauce
  • 1 tbsp. Worcestershire sauce
  • 2 tbsp. spicy mustard
  • 2 tsp. chili sauce
  • 1 15 oz. can sweet corn, drained
  • 2 cups. grape tomatoes, halved
  • 1 1/2 cups cubed sharp cheddar cheese
  • 3/4 cup diced green onions

Instructions

  1. Cook rotini pasta according to package instructions. Strain and rinse thoroughly with cold water to “shock” the pasta and stop the cooking process.
  2. Drizzle the completely cooled pasta with 1 tbsp. olive oil to prevent sticking, and set aside.
  3. In a large skillet over medium heat, cook the chopped thick-cut bacon until it’s wonderfully crispy.
  4. Remove the crispy bacon to a paper towel-lined plate, leaving a small amount of bacon grease in the pan for flavor.
  5. Add the lean ground beef to the skillet and cook until it’s fully browned, breaking it up as it cooks.
  6. Season the browned ground beef generously with onion powder, garlic powder, crushed red pepper flakes, and salt and pepper to taste.
  7. Skim away any excess grease from the ground beef and remove from heat. Allow both the bacon and ground beef to cool slightly before proceeding.
