I have been asked if you can use apple Juice instead of apple cider in this recipe and even though it may seem like it wouldnt make a big difference, you really shouldnt! Continue reading why below!
First off, Apple ‘Cider’ is made from apples that are ground into applesauce, then sent through an apple press which leaves only the apple juice with is basically unfiltered apple juice and usually its found in the shops unpasteurized.
Apple juice on the other hand, is always filtered to remove any bits of apple and solids. its also pasteurized to increase shelf life in the supermarkets. It has more apple taste but less of tangy flavor than the cider will. I have tried both and the cider just wins in this recipe, taste wise!

BAKER NOTES

Make sure to never overmix your cake batter, it will result in a dense chewy cake!

always make sure you grease your baking pans, it helps prevent sticking so its important if you want a pretty cake!

Try to refrain from constantly opening the oven door whenever making any cake- the shifts in temp can cause the center of your cakes to sink!

I think any buttercream frosting should stay as cold as possible, for not only the best look but also the best flavor as well!

Apple Cider Cake with Brown Sugar Buttercream Frosting

Ingredients
Cake
- 1 cup butter- softened
- 1 cup brown sugar-packed
- 4 eggs
- 2 teaspoons vanilla extract
- 3 cups flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ground cloves
- 1 ½ cups apple cider
Frosting:
- 3 sticks butter- softened
- ½ cup brown sugar- packed
- 2 teaspoon vanilla extract
- 3-4 cups confectioners’ sugar
- 1 teaspoon cinnamon
- 3-4 Tablespoons heavy whipping cream
Instructions
Frosting:
- In the bowl of a stand mixer equipped with a paddle attachment, add the butter and cream on high speed for 2-3 minutes until light and fluffy.
- Add the brown sugar and mix for an additional 1-2 minutes.
- Add the vanilla, powdered sugar, and cinnamon and mix slowly until all the sugar is combined.
- Last, add in the heavy cream and mix on high speed for 2-3 minutes or until you get a “whipped” consistency.
Assembly:
- Place one layer of cake on a cake stand or serving plate. Top with about 1 cup of frosting and smooth evenly.
- Place the second layer of cake on top and use the remaining frosting to cover the entire outside of the cake.
- Pipe some swirls on top if desired and top with fresh apple slices (or take the extra time to go nuts and do little apple shaped hearts LOL)
