Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup melted unsalted butter plus more for cooking
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl whisk together the flour, granulated sugar baking powder, baking soda, and salt until combined.
  2. Next add buttermilk, melted butter, egg and vanilla extract to the bowl and whisk until combined. Some lumps are fine.
  3. Allow batter to rest for about 10 minutes.
  4. Bring a large skillet to medium heat. Melt 1⁄2 tablespoon of butter.
  5. Using a medium cookie scoop drop 5-6 scoops in the melted butter leaving some space between scoops.
  6. Cook the pancakes until little bubbles begin to form.
  7. Flip pancakes and cook until edges are golden on both sides and a cake taster or toothpick inserted comes out clean.
  8. Transfer to a plate and cook remaining pancakes adding extra butter to pan as needed.
  9. Enjoy pancakes hot with your favorite toppings like butter, pure maple syrup and berries.
