Crust:

  • 3 cups vanilla wafers, crushed
  • ¼ cup granulated white sugar

Cheesecake:

  • 1 cup plain Greek yogurt, room temperature
  • ½ Tablespoon vanilla extract
  • 1 (8 ounce) package whipped topping

  • 1 pound frozen strawberries
  • ¼ cup light brown sugar, packed
  • 3 Tablespoons water
  • 1 Tablespoon all-purpose flour
  • 1 Tablespoon lemon juice

Instructions

  1. Assemble a 9-inch springform pan and set aside.
  2. Place the vanilla wafers in a food processor with the granulated white sugar and process until well crumbled.
  3. Pour in the melted butter and pulse to combine until a moist crumb forms.
  4. Press the mixture evenly into the bottom and about ½ – ¾ of the way up the sides of the springform pan using the back of a glass or measuring cup. You want to create an evenly thick crust.

  6. To make the cheesecake filling, in a large bowl, beat together the softened cream cheese and granulated white sugar with an electric mixer until the mixture is smooth and fluffy, with no lumps.
  7. Mix in the plain Greek yogurt and vanilla extract until the mixture is completely smooth and creamy.
  8. Gently fold in the whipped topping until just combined, being careful not to overmix, which can deflate the whipped topping.
