Ingredients

Cake Batter:

  • ½ cup salted butter softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 1/2 cups flour
  • 1/2 cup greek yogurt
  • 1/4 cup milk

Apple mixture:

  • 2 medium apples granny smith - about 2 cups
  • 1/2 cup brown sugar packed
  • 1 teaspoon cinnamon

Brown sugar - Cinnamon mixture

  • 1/4 cup brown sugar packed
  • 1/2 Tablespoon cinnamon
  • 1 teaspoon sugar

Glaze:

  • 1 cup confectioners sugar
  • 3 Tablespoon cream or milk
  • 1 teaspoon vanilla white or dark

Instructions

  1. Preheat the oven to 350 degrees.
  2. Prepare a 9x5-inch loaf pan by spraying it with non-stick spray.
  3. In a large bowl, beat together ½ cup butter and the cup sugar until smooth.
  4. Then, one at a time, beat in the eggs.
  5. Mix in 1 teaspoon vanilla extract.
  6. Mix in baking powder and flour. Mix only until blended - do not overmix.
  7. Add greek yogurt and milk into batter and gently mix just until smooth. Set this aside.
  8. In a separate bowl, stir together the apple coating, 1/2 cup brown sugar and 1 teaspoon cinnamon. Set this aside.
  9. Peel and dice the 2 apples.
  10. Add these to the brown sugar and cinnamon mixture to coat.
  11. Pour half of the batter into the prepared loaf pan.
  12. Then layer on half the apple mixture.
  13. Sprinkle ½ of the brown sugar/cinnamon/sugar mixture on top of the apple layer.
  14. Gently swirl a knife through the layers.
  15. Then we’ll repeat the layers one more time: batter, then apple mixture, then end with the brown sugar-cinnamon mixture.
  16. Again, use a knife to swirl through the layers.
  17. Bake the loaf until it is fully cooked (an inserted toothpick comes out with no batter sticking to it). Check it after 50 minutes, then after each 5 minutes.
  18. If the loaf starts getting dark on top before the loaf is fully baked, put a piece of tin foil over the top to protect it from burning.
  19. When the loaf is removed from the oven it needs to cool for at least 30 minutes before you add the glaze (otherwise it will all soak in).
  20. While the loaf is cooling you could make the glaze.
  21. Whisk together confectioners sugar, cream, and vanilla until smooth.
  22. You can thicken it by using more confectioners sugar, or thin it by using more cream.
  23. Glaze the bread.
