Blueberry Crumb Bars

Ingredients
- 3 cups all-purpose flour
- ½ cup white granulated sugar
- ½ cup light brown sugar
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup salted butter cold
- 1 large egg
- 2 ½ cups frozen blueberries thawed
- 1 teaspoon vanilla extract
- ¼ cup lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 375°F.
- Whisk together the flour, sugars, baking soda, and baking powder in a large mixing bowl.
- Cut the butter into small cubes and use a pastry cutter to work the butter into the dry ingredients until the butter is broken down into pea-sized pieces.
- Add the egg to the mixing bowl. Use the pastry cutter or your hands to work it in until it’s incorporated with the rest of the dough.
- Press about 3/4 of the dough into the bottom of a 9×13 inch baking dish to form a crust. Set aside.
- In a medium sized bowl, stir together the blueberries, lemon juice, vanilla, and cornstarch. Pour the blueberry mixture into the pan and sprinkle the remaining crumb mixture on top.
- Bake your crumb bars for 40 minutes. Let the bars cool on the counter for about 20 minutes before slicing. Serve and enjoy!
