Cinnamon Mexican Wedding Cookies

Ingredients

For The Cookie dough:

  • 1 1/4 cups /10 oz unsalted butter softened
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup corn-starch

For the Topping:

  • 1 cup confectioners’ sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 325 F Line 2 baking trays with parchment paper.
  2. Sift the icing sugar and ground cinnamon into a medium bowl. Set aside.
  3. In a bowl of your stand mixer with a dough hook, beat the butter with sugar until light and fluffy. Add the vanilla extract. Sift the all-purpose flour and corn flour together over the butter mixture and continue beating until it comes together.
  4. Roll heaped tablespoons of mixture into balls, then roll in the cinnamon-sugar mixture and place on the prepared baking trays.
  5. Bake in the preheated oven for 14-15 minutes or until pale golden.
  6. Remove from the oven and allow to cool for 5 minutes.
  7. Toss the cookies again in the sugar mixture and leave on a wire rack to cool completely.
