Crockpot Mississippi Meatloaf

Ingredients
- 2 pounds ground beef used 90/10
- 1 cup panko bread crumbs
- 1 cup milk
- 2 eggs
- 2 1 ounce ranch dressing seasoning packets
- 2 1 ounce au jus gravy mix packets
- 1 tablespoon minced dried onion
- 2 cups water
- 6-8 pepperoncini peppers
- Optional* 1 tablespoon chopped fresh parsley for garnish
Instructions
- Mix ground beef, bread crumbs, milk, eggs, 1 ranch packet, 1 aus jus packet and minced dried onion together in a large bowl until just combined.
- Whisk remaining ranch and au jus packets with the water, set aside.
- Add foil to the bottom of a 5 quart or larger slow cooker and spray with cooking spray.
- Form a meatloaf shape out of the meat mixture and place on the foil in the slow cooker.
- Pour the water mixture on and around the meatloaf and add the pepperoncini peppers to the slow cooker.
- Cover and cook on low for 6 hours, or high for 3-4 hours, until the meatloaf is cooked through with an internal temp of 165F.
- Garnish with fresh parsley, if desired.
- Serve warm over mashed potatoes or rice, enjoy!
