Garlic Butter Chicken Bites

Ingredients
- 1 1/2 lbs boneless skinless chicken breast, cut into 1-inch cubes
- 1 tablespoon sweet paprika
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup butter
- 4 garlic cloves minced
- 1 tablespoon fresh parsley chopped
Instructions
- Pat the chicken cubes dry with paper towels to remove excess moisture. This will help them crisp up when cooked.
- In a bowl, combine the chicken with paprika, cornstarch, salt, and black pepper. Toss until the chicken is evenly coated.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chicken cubes in a single layer and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté for about 30 seconds, or until fragrant.
- Return the cooked chicken to the skillet and toss it in the garlic butter until well coated. Cook for an additional minute to let the flavors meld together.
- Sprinkle with fresh parsley and serve hot.
