Jack Frost Cocktail

Ingredients

Makes 4

• 4 cups crushed ice
• 1 cup pineapple juice
• 1/2 cup blue curacao
• 1/2 cup white rum
• 1/2 cup cream of coconut
• 1 tablespoon light corn syrup
• 1/4 cup sweetened flaked coconut

Instructions

1. Place the ice, pineapple juice, blue curacao, rum, and cream of coconut into a blender.
2. Blend until smooth and frothy.
3. Place the corn syrup on a plate and the coconut flakes on another plate.
4. Dip the rim of the glass into the corn syrup, then roll in the coconut.
5. Pour the cocktail into the glasses and serve.
