Jalapeño Popper Crack Chicken Soup

Ingredients
- 8 slices bacon uncooked and chopped
- 1 sweet onion chopped
- 1 green pepper chopped
- 1 red pepper chopped
- 3 jalapeno peppers finely chopped
- 2 cloves garlic minced
- 1/3 cup all purpose flour
- 3 cups chicken broth
- 1 8oz package cream cheese
- 2 cups chicken cooked and shredded
- 1 cup heavy whipping cream
- 1 tablespoon taco seasoning
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 cup cheddar cheese shredded
- For garnish: sliced green onions bacon bits, shredded cheddar cheese, sliced jalapenos

Instructions
- Add bacon, onion, green pepper, red pepper, jalapeno peppers and garlic to a large pot over medium heat. Cook, stirring occasionally, for 10 minutes or until onions are translucent and veggies are softened.
- Stir in flour. Cook for 1 minute, stirring constantly.
- Stir in chicken broth, cream cheese, chicken, heavy whipping cream, taco seasoning, salt, and pepper. Bring to a boil.
- Once boiling, reduce heat to medium low and simmer for 30 minutes, uncovered, stirring occasionally.
- Remove from heat and stir in cheddar cheese.
- Ladle into soup bowls and garnish with sliced green onions, bacon, cheddar cheese and jalapenos, if desired.
