Oatmeal Raisin Cookies

Ingredients
Yield: 2 1/2 dozen cookies
- 1/2 cup sugar
- 3/4 cup dark brown sugar packed
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter softened at room temperature
- 1/4 cup unsweetened applesauce room temperature
- 1 teaspoon vanilla
- 2 cups quick-cooking oats uncooked
- 1/2 cup raisins
- 1/2 cup white chocolate chips or chocolate if you prefer
Instructions
- Preheat the oven to 350 F
- Line a baking sheet with parchment paper or silicone baking mat.
- In a large mixing bowl whisk together the sugar, brown sugar, flour, baking powder & salt.
- Add softened butter, applesauce and vanilla and stir until well combined.
- Mix in oatmeal.
- Add white chocolate chips and raisins to the mixture and stir.
- Use a cookie scoop to make 1 inch rounds and place on the baking sheet.
- Let the cookies sit on the baking sheet for 2 minutes before transferring them to a wire rack to cool.
