Strawberry Rhubarb Cobbler

Ingredients

Servings: 6

  • 4 cups fresh strawberries- chopped
  • 2 cups fresh rhubarb- sliced
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1 stick + 2 tablespoons butter

Instructions

  1. Preheat your oven to 375 degrees/F and prepare a 9x12 (you can also use a 9x9) baking dish by spraying with non-stick spray.
  2. Prepare your strawberries and rhubarb and place in an even layer on the bottom of the baking dish.
  3. In a medium bowl, add the flour, sugar, cinnamon, baking powder, and egg and mix until you get a crumble. I found it was easier to mix with my hand.
  4. Sprinkle the crumble over top the strawberries and rhubarb in an even layer.
  5. Slice the butter into thin pats and place over the top of the crumble in an even layer.
  6. Bake for 40-45 minutes until the top is golden brown.
  7. Remove from the oven and serve while warm with a scoop of vanilla ice cream.
  8. ENJOY!
