For the Spiced Apple Layer:

  • 4 cups Granny Smith apples, peeled, cored, and diced (approximately 4 medium apples)
  • 2 Tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice

For the Oat Crumble Topping:

  • 1 cup all-purpose flour
  • 1 cup light brown sugar, lightly packed
  • ½ cup quick oats
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter, softened
  • Thick caramel sauce, for drizzling

Instructions

For the Shortbread Crust:

  • Preheat your oven to 350°F (175°C). Prepare a 9×13-inch baking dish by generously spraying it with non-stick cooking spray, then line it with parchment paper. Ensure the parchment paper extends 1-2 inches beyond the sides to create “handles,” which will make it much easier to lift the bars out of the pan later.
  • In the bowl of a stand mixer fitted with a paddle attachment (or using a large bowl and a hand mixer), combine the all-purpose flour, light brown sugar, salt, and softened butter. Mix on medium speed until the ingredients are fully combined and resemble coarse crumbs. Press this mixture evenly into the bottom of the prepared baking dish. Bake for 15-20 minutes, or until the crust turns a beautiful golden brown.

For the Cheesecake Filling:

  • While the crust bakes, prepare the cheesecake filling. In a clean stand mixer bowl with a paddle attachment (or using a hand mixer), cream together the softened cream cheese and granulated sugar until the mixture is completely smooth and free of lumps. Add the eggs and vanilla extract, then mix on low speed just until they are fully incorporated. Be careful not to overmix at this stage. Pour the cheesecake filling evenly over the warm, pre-baked crust.

For the Spiced Apple Layer:

  • In a medium bowl, gently stir together the diced Granny Smith apples, granulated sugar, ground cinnamon, ground nutmeg, and fresh lemon juice until the apples are thoroughly coated with the spice mixture. Carefully spoon this spiced apple mixture evenly over the cheesecake filling in the pan.

For the Oat Crumble Topping & Baking:

  • In a separate medium bowl, combine the all-purpose flour, light brown sugar, quick oats, ground cinnamon, and softened butter for the crumble topping. Work the butter into the dry ingredients using your fingertips or a pastry blender until the mixture forms distinct, pea-sized clumps. I find using hands often achieves the best results for a good clumpy crumble.
  • Once the crumble is ready, sprinkle it generously and evenly over the spiced apple layer. Lightly press the crumble down to help it adhere and form a cohesive top layer.
  • Return the baking dish to the preheated oven and bake for an additional 30-35 minutes, or until the cheesecake filling is set (a slight jiggle in the very center is okay) and the crumble topping is golden brown and crisp. Remove from the oven and allow the bars to cool completely on a wire rack at room temperature. Once cooled, transfer the pan to the refrigerator to chill for at least 2 hours, or ideally, overnight, for the best texture and clean slicing.
  • When you are ready to serve, carefully lift the bars out of the pan using the parchment paper handles. Drizzle generously with your thick caramel topping and then slice into individual bars.
  • Store any leftover Caramel Apple Cheesecake Bars in an airtight container in the refrigerator for up to three days to maintain their freshness and delicious taste.
