Serve up these mini apple crisp cheesecake bites. These are a graham cracker crust, that is filled with a creamy cinnamon cheesecake, apple pie filling from scratch, and a crumble topping. A delicious single serve sized dessert.
Ingredients
Crust:
- 1 ½ cups graham cracker crumbs
- 1 tablespoon granulated sugar
- ½ teaspoon ground cinnamon
- ½ cup butter, melted
Cheesecake:
- 16 oz. cream cheese, room temperature
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 2 teaspoons vanilla extract
- 2 large eggs
Apple Filling:
- 2 medium apples, diced
- 2 teaspoons fresh lemon juice
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons brown sugar, packed
- 1 ½ teaspoons cornstarch
Crumble Topping:
- ½ cup flour
- ¼ cup quick oats
- ¼ cup brown sugar, packed
- ½ teaspoon ground cinnamon
- 2 tbsp butter, melted
- Caramel Sauce (optional)
Instructions
Crust:
- Preheat your oven to 350 degrees F (175°C) and prepare 16 muffin cups with paper liners.
- Add about 11 graham crackers into a food processor and pulse until you get fine crumbs. Add the granulated sugar, ½ teaspoon ground cinnamon, and the ½ cup melted butter. Pulse again until all ingredients are well combined and resemble wet sand.
- Spoon approximately 1 tablespoon of the graham cracker crumb mixture into the bottom of each prepared muffin cup. Use the back of a small measuring cup or a shot glass to firmly press the crumbs into a compact, even crust. Set the prepared crusts aside.
Cheesecake:
- In the bowl of a stand mixer fitted with a paddle attachment (or using a hand mixer), beat the softened cream cheese on medium speed for 4-5 minutes until it is exceptionally smooth, light, and completely free of any lumps. This step is crucial for a creamy cheesecake.

- In a medium bowl, combine the diced apples. Drizzle with 2 teaspoons of fresh lemon juice and toss gently to ensure the apples are well coated, preventing browning.
- Add the 1 ½ teaspoons ground cinnamon, ¼ teaspoon ground nutmeg, 2 tablespoons packed brown sugar, and 1 ½ teaspoons cornstarch to the apples. Toss everything together until the apples are thoroughly coated with the spice and sugar mixture.
- Carefully spoon 1-2 tablespoons of the prepared apple mixture over the top of the cheesecake batter in each muffin cup.
Crumble Topping:
- In a separate medium bowl, combine the ½ cup flour, ¼ cup quick oats, ¼ cup packed brown sugar, and ½ teaspoon ground cinnamon. Whisk these dry ingredients together thoroughly.
- Pour the 2 tablespoons of melted butter into the dry crumble mixture. Use a fork to mix until there are no dry spots remaining and the mixture forms a nice, crumbly texture.
