Antipasto Tortellini Pasta Salad

Ingredients

  • 1 (20 oz) package of fresh tortellini, cooked and cooled
  • 6-8 oz. pepperoni, chopped into ½” pieces
  • 6-8 oz. Genoa salami, chopped into ½” pieces
  • 3 oz. pitted green olives
  • 3 oz. pitted kalamata olives
  • 1 red or orange bell pepper, diced
  • 8 oz. fresh mozzarella, cubed (pearls or bocconcini)
  • 10 oz. cherry tomatoes, fresh, halved
  • 10 pepperoncinis, sliced or whole (to taste)
  • 8 oz. canned artichoke hearts, well-drained and chopped
  • 2 cups Italian salad dressing, divided
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Optional: Italian seasoning (for garnish)

Instructions

  1. In a large salad bowl, combine the cooled tortellini, chopped pepperoni, Genoa salami, green olives, kalamata olives, diced bell pepper, cubed mozzarella, cherry tomatoes, pepperoncinis, and chopped artichoke hearts.
  2. Pour about half (1 cup) of the Italian salad dressing over the top of the ingredients. Toss gently until all components are evenly coated.
  3. If you plan to serve the salad later, cover the bowl and refrigerate for up to 3 days. This allows the flavors to develop further.
  4. Before serving, give the salad a good stir. Add additional Italian salad dressing (from the remaining 1 cup) as needed until it reaches your preferred level of moisture and flavor.
