Strawberry Puree

  • 1 cup chopped fresh strawberries
  • ¼ cup sugar
  • ¼ cup water

Cake

  • One box white cake mix
  • 1 box of strawberry gelatin
  • 1 cup sugar
  • 1 cup all purpose flour
  • 1 cup sour cream
  • 3 eggs
  • 1 cup strawberry puree from above recipe

Whipped Cream Frosting

  • 1 ½ cups heavy whipping cream
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 1 cup roughly chopped strawberries optional, for layering

Instructions

For the Strawberry Puree:

  • Place all of the ingredients for the strawberry puree (chopped strawberries, sugar, water) into a small saucepan. Bring to a boil for one minute, then remove from heat. Transfer the mixture to a food processor and process until there are no large lumps and it’s mostly smooth. Alternatively, use a potato masher or fork to smash the strawberries as finely as possible. Set aside to cool.

For the Cake Layers:

  • Prepare three 6-inch cake pans by greasing them thoroughly with nonstick spray or butter and flour. Preheat your oven to 325 degrees F (160 degrees C).
  • In a large bowl, combine all dry ingredients for the cake: white cake mix, strawberry gelatin, sugar, and all-purpose flour. Whisk thoroughly to ensure there are no large lumps and ingredients are well combined; this acts as a substitute for sifting.
  • Add in the remaining wet ingredients to the dry mixture: sour cream, eggs, and the cooled strawberry puree. Mix until the batter is smooth and no dry streaks remain. Be careful not to overmix.
  • Distribute the batter evenly between the three prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  • Once baked, remove the cakes from the oven and let them cool in their pans for about 10-15 minutes before inverting them onto a wire rack to cool completely. This step is crucial before frosting.

For the Whipped Cream Frosting:

  • You can opt for a premade whipped topping if you’re short on time, simply spreading it on the cake. However, for the best taste and texture, we recommend this homemade method.
  • Pour the cold heavy whipping cream into the bowl of a stand mixer fitted with a whisk attachment, or use a hand mixer with a large bowl.
  • Whisk on medium-high speed until the cream stiffens and forms firm peaks. Be careful not to over-whisk, as it can turn into butter.
  • Slowly add in the sifted powdered sugar and vanilla extract, continuing to whisk until completely combined and the frosting is smooth and stable.

Assembly:

  • Once the cake layers are completely cool, use a serrated knife or a cake leveler to even out the tops of each layer, creating flat surfaces for stacking.
  • Place one layer of cake on your desired cake board or serving plate. Spread a generous amount of the prepared whipped cream frosting over the top. If desired, sprinkle some of the roughly chopped fresh strawberries over the frosting.
  • Carefully place the second cake layer on top, repeating the frosting and strawberry steps. Then add the third cake layer.
  • Cover the entire outside of the cake with the remaining whipped cream frosting. Decorate the top with fresh strawberries. For an extra touch of indulgence, I also added some cookies and cream Lindor truffles!
