What Makes This Italian Lemon Drop Cake So Special?
The magic of this Italian Lemon Drop Cake lies in its harmonious balance of flavors and textures. The cake itself is incredibly moist, with a fine crumb that melts in your mouth. This is achieved through a careful combination of fresh lemon juice and zest, complemented by buttermilk, which adds a subtle tang and ensures supreme tenderness. But the true showstopper is the Lemon Buttercream Frosting. It’s wonderfully light yet rich, packed with even more fresh lemon zest and juice, creating a symphony of sweet and tart notes that perfectly balances the cake. The “drop” in its name refers to the intense, refreshing burst of lemon in every single bite – a truly delightful experience!
Tips for Achieving Lemon Cake Perfection
- Fresh Ingredients are Key: Always use fresh lemons for both the zest and juice. Bottled lemon juice simply won’t deliver the same vibrant, authentic flavor.
- Room Temperature Matters: Ensure your butter and eggs are at room temperature. This allows them to cream together properly, incorporating more air for a lighter cake batter and a smoother frosting.
- Don’t Overmix: When adding dry ingredients to wet, mix just until combined. Overmixing can develop the gluten in the flour too much, leading to a tough cake.
- Cool Completely: Before frosting, make sure your cake layers are absolutely cool. A warm cake will melt your beautiful buttercream, causing it to slide off.
- Level Your Layers: Using a cake slicer to level the tops of your cooled cake layers creates a flat surface, making assembly much easier and resulting in a professional-looking cake.

Italian Lemon Drop Cake!
Ingredients
Cake Ingredients
- 3 C flour
- 2 Tbsp baking powder
- 1 tsp kosher salt
- 2 C unsalted sweet cream butter softened to room temperature
- 1 3/4 C sugar
- 4 large eggs
- 2 tsp pure vanilla extract
- 1 C buttermilk
- 1 Tbsp lemon zest
- 1/3 C fresh lemon juice
- 3 9 inch round cake pans
Lemon Frosting ingredients:
- 3 C unsalted sweet cream butter softened
- 6 C powdered sugar
- 2 tbsp lemon zest
- 3 tsp fresh lemon juice
- 3-6 tbsp heavy whipping cream
- 1 large piping bag fitted with a star tip
- Lemons thinly sliced for toppings
Instructions
Cake Directions
-
Preheat oven to 350°F (175°C) and generously spray the cake pans with baking spray or grease and flour them.
-
In a large bowl, whisk together the flour, baking powder, and kosher salt. Set aside.
-
Using a stand mixer fitted with the paddle attachment, beat the softened butter and sugar together on medium speed until light and creamy, about 3-5 minutes.
-
Gradually beat in the large eggs, one at a time, until fully incorporated. Then, mix in the pure vanilla extract.
-
With the mixer on low speed, add the dry ingredients to the wet mixture in three additions, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined after each addition.
-
Finally, gently fold in the lemon zest and fresh lemon juice until just incorporated. Be careful not to overmix the batter.
-
Divide the batter evenly among the three prepared 9-inch round cake pans.
-
Bake for approximately 21-26 minutes, or until a wooden skewer inserted into the center of a cake comes out clean. Let the cakes cool in the pans for 10-15 minutes before inverting them onto a wire rack to cool completely.
Frosting Directions
-
Using a stand mixer with the paddle attachment, cream the softened unsalted sweet cream butter until light and fluffy. Gradually add the powdered sugar, one cup at a time, mixing until smooth.
-
Beat in the lemon zest and fresh lemon juice. With the mixer on low, slowly add the heavy whipping cream, starting with 3 tbsp and adding more as needed until the frosting reaches a stiff, smooth consistency perfect for spreading and piping.
-
Once the cake layers are completely cooled, use a serrated knife or cake leveler to slice off any domed tops, creating flat surfaces for easy stacking.
-
Place one cake layer on your desired serving plate or cake stand. Spread about 1 cup of the lemon buttercream evenly over the top.
-
Carefully place the second cake layer on top and spread another cup of frosting evenly.
-
Top with the third cake layer, pressing gently to ensure it’s level.
-
Apply a thin layer of the remaining frosting all over the top and sides of the cake for a “crumb coat.” Chill the cake for 15-20 minutes to set the crumb coat.
-
Once the crumb coat is set, apply the remaining frosting evenly over the entire cake, smoothing the sides and top as desired.
-
Scoop some of the remaining frosting into a large piping bag fitted with a star tip. Pipe decorative dollops around the base and top edge of the cake.
-
Pipe larger dollops of frosting onto the top of the cake for an appealing finish.
-
Artfully place the thinly sliced lemons in between the larger dollops of frosting on top of the cake for garnish.
-
Slice, serve, and enjoy this bright and zesty Italian Lemon Drop Cake!
