This is a comfort food crockpot recipe that the whole family will be on board with. The slow-cooked steak bites are super tender and bursting with flavor. Toss ingredients in the slow cooker in the morning and let it slow cook all day long and come home to your home smelling incredible.

Ingredients You Will Need

Beef Steak – We used sirloin steak for this recipe. The goal is bite-size pieces so they are easy to poke with a fork and eat and not have to cut up the meat more once it is fully cooked.

Seasonings – Salt, black pepper, and Au Jus gravy mix are used to really help flavor the beef. Plus you can use fresh parsley for garnish.

Oil – You will pan-fry the steak and the oil is needed to help get that rich crust on the beef.

Onion – A sweet onion is what I used. You want it thinly sliced so when it cooks it becomes extra tender.

Garlic – Fresh garlic or jarred minced garlic will work for this recipe.

Beef Stock – The liquid is beef stock which is going to truly deepen the flavors of this slow cooker steak recipe.

Butter– You need real butter for this recipe. As it cooks it will help tenderize but also flavor the meat.

Ways To Serve Up The Beef Steak Bites

So you can serve up the steak any way you want. For a lower-carb option consider pairing with spaghetti squash or even cauliflower rice. Or opt for a heartier option like egg noodles or even a bed of mashed potatoes. Or opt for white or jasmine rice for another option. The sauce from the steak soaks in the noodles or rice and richens the flavor even more.

Then pair it with some veggies, a crisp green salad, dinner rolls, or any other favorite side dishes!

Let me share some helpful tips for making the crockpot steak bites to help set you up for success!

Searing Meat

You will find that seasoning and then sauteeing the meat to create that golden brown crust on the steak enhances the texture of the beef but also the flavor. Skipping this step can be done but you will lack a lot of flavor on the meat itself once it is done.

You can sear in a pan on the stovetop, or if your crockpot has a saute function go that route for easier cleanup.

Crockpot Liners

Did you know you can buy crockpot liners? It is a plastic liner that you place in the crockpot and it makes for easy cleanup. I love using them and this has been a game changer for my slow cooker process.

Thinly Slice Onions and Garlic

Making sure you use thin slices of the vegetables helps ensure it cooks down really well. Otherwise, it can be a bit of a chewy texture if they don’t fully tenderize in the slow cooker.

Low and Slow

Using the low setting over the high setting is going to make sure you get that soft and tender steak you want. Using the high setting can be done but it can leave the steak a bit more chewy compared to low and slow all day.

Storing Leftovers

Refrigerate the leftover steak bites you have. Just place it in a sealed container for 3-4 days in the fridge. Then reheat as you would like. I find that if you warm it up in the microwave place it in a covered dish that can vent. This prevents splatter.

Or you can freeze any leftover steak you do not eat. A freezer bag or freezer container will work. Freeze for 4-5 months. Then thaw in the fridge overnight. Or defrost and then reheat as you would like.

FAQs

Can I use any type of steak for steak bites in the crockpot?

Any type of steak like sirloin, tenderloin, beef stew meat, or even ribeye can work. You will find it is okay to use steak that is budget-friendly since it cooks low and slow. It will tenderize nicely.

Do I need to sear the steak before adding it to the crockpot?

While searing is not a must, it is going to deepen the flavors of the beef. I highly recommend not skipping that step of making the steak bites.

Can I add vegetables to the crockpot with the steak bites?

While I added onions and garlic, you can add carrots, mushrooms, peppers, or other vegetables of choice. It will just richen the flavor of the meat.

How can I thicken the sauce in the crockpot?

If your sauce is still very thin, in the last 30 minutes of cooking you can turn to high. Then in a small bowl mix 1 tablespoon cornstarch and 1 tablespoon cold water. Stir well and then stir into the meat. Let it cook for 30 more minutes and it will thicken the mixture.

Ingredients

  • 3 pounds sirloin steak cut into bite-sized pieces
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 small sweet onion thinly sliced
  • 3 cloves garlic thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce packet au jus gravy mix
  • 4 tablespoons unsalted butter thinly sliced
  • fresh chopped parsley for garnish optional

Instructions

  1. Place the steak into a large bowl with the salt and pepper and toss to combine.
  2. Get a large skillet hot over medium-high heat and add half of the oil. Sear off the steak pieces in batches and place them into an 8-quart slow cooker. Add more oil to the pan if needed.
  3. Once all the steak is seared, add the onion and garlic to the slow cooker, toss with the steak bites.
  4. Pour in the beef stock. Sprinkle the au jus packet over the top. Lay slices of the butter over the top.
  5. Cover the slow cooker and cook on high for 3-4 hours or low 6-8 hours. Stir every 30 minutes or so if you can. Serve with a garnish of fresh parsley if using.
